Vegan Carrot Cake

This is a delicious dessert!

Ingredients:

1/2 cup of flour (I used pumpkin pulp dried and grounded.  You use any flour).
1/2 cup of GF oats grounded (you can use cornflour if you don’t have oats).
3 apples organic or regular.
3 medium carrots organic or regular (if organic you don’t have to peel. I used juice pulp but you grator these).
Mix all the above in a bowl.
Then add in:
1 tsp of cinnamon
3 tbsp of sweetener – date syrup, agave syrup, maple syrup
1 tsp of stevia or omit stevia and add in an extra tbsp of sweetener
1/2 cup of raisins
2 tbsp of oil – vegetable, liquid coconut
1/2 tsp vanilla extract
Thoroughly mix everything, then place in a baking tin covered with baking paper. (If your tin is too big just crunch up some b.paper and cushion tin to the amount you desire).

Icing:
2 tbsp if flavoured vegan protein powder (you can use coconut flour)
2 tbsp of sweetener plus 1/2 tsp of stevia or omit stevia and an extra 1/2 tsp of sweetener.
1 tbsp of veg oil
1 tbsp of warm water
Mix everything thoroughly until it becomes a thick runny mixture and once the cake has cooled pour over it and decorate with berries.
